Erin's Favorite Product My favorite new cooking gadget is the Cuisinart "Griddler" contact grill. I got one in the spring and have used it for everything including Panini, quesadillas, chicken breasts, zucchini pancakes and sausages. It has easily removable non-stick cooking plates which go in the sink for washing. The Griddler opens flat to make a griddle with large surfaces for extra space when you have a large breakfast to make. Or it closes like a book to press sandwiches on both sides- no flipping. My favorite Panini is prosciutto, fig jam and fontina on rustic bread. Okay now I'm really hungry, I have to go now!
Roasted Root Vegetables For four people, peel five large carrots, two medium beets, two medium parsnips, a small onion and two cloves of garlic. Cut up the vegetables into large bite-sized chunks- they will shrink. Place all the vegetables in a glass baking dish, except the garlic. Drizzle liberally with olive oil and sprinkle with salt, pepper and your favorite herbs. Herbs de Provence is good. Roast at 450 for 40 minutes, stirring twice. Take out of the oven at 40 minutes and add the garlic (if you add it too soon it will burn). Stir well and roast for ten more minutes. Enjoy! It's especially good with cast-iron fried rib steak and creamy cheese polenta. Oh, yum!
